Is there a chance that this reboot would somehow "factory reset" my brain into real women and not to porn? In other words, return myself back to normal? Thanks in advance for the answers

Yes, you will return to normal sexuality, usually after anywhere from 1-6 months. But don't expect quitting to cure everything, this is a trap. If you just quit an urge will catch you by surprise at some point and you'll relapse.
I would suggest forming new habits, doing research, and setting goals. It's important to have good habits to replace the bad one (porn). Also, you need positive goals that keep you from porn like "I want to be a better partner to my girlfriend" or "I want to be a better role model to young kids" or it could be anything. Research is also important because you need to know how porn addiction works. Also, knowing some truths about porn will help to make it repulsive. Ideally you want to develop a repulsion to porn because that way if an urge comes up you won't even consider it because you'll know the truth about what porn really is, how it harms you, and how it harms others. This will keep you from resorting to it for the long term.
